Oh hello! Good morning Wednesday! After the events of last week I'm finally feeling myself again, and ready to attack every component this week throws at me. And, to start this Wednesday off in a blaze of glory, I'm sharing with you one of my fave breakfast recipes. Healthy, delicious, low fat and ticks the clean eating box. Oh yes, you're welcome.
May I introduce...
Paleo Pancakes!
What You Need:
- 1 banana
- 2 eggs
- 1tsp cinnamon
- 1tsp chia seeds
- Coconut Oil
- Honey (optional)
- Blueberries (Optional)
And Now You Need To:
- Chop the banana up and throw it in a blender, along with the eggs, cinnamon and chia seeds. Blend it up nice and good so the mixture is a smooth consistency I've made these before just by mashing the banana, but it was a fail when it came to flipping.
- Heat a teaspoon of coconut oil in a frypan. Once hot, pour some of the mixture in and cook just like a pancake. Flip them when you see bubbles appear.
- Once you've finished cooking all the pancakes, drizzle honey over the top and add some blueberries. So delish!
- Enjoy your guilt free pancakes!












Oh yum! We just made these for morning tea and they were truly delicious. Even the banana hating 7 year old wolfed down hers :o)
