I have good news.
I have found the holy grail of the healthy cookie that is wheat, dairy and sugar free but still tastes the BOMB DIGGITY! Huzzah!
Ladies and Gentleman, I present to you...
Giant Vanilla Bean Chocolate Chunk Paleo Cookies courtesy of the fabulous PaleOMG!
You will need...
- 1 cup of sunflower seed spread
- 1/3 cup of raw honey
- 1 egg, whisked
- 1 tsp vanilla essence (PaleOMG uses a vanilla bean- click here to see what she does)
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 tsp bicarb soda
- 1/2 cup dark chocolate chips
- pinch of salt
And Then You Need To...
Preheat the oven to 175 degrees. Throw all the ingredients into a bowl and mix well. Scoop spoonfuls of mixture onto a tray lined with baking paper, spread apart enough to ensure they don’t touch when cooking. Bake for 18-20 minutes. They will be soft when you bring them out, but will harden when cooling.
