Low Fat Apple, Banana and Cinnamon Muffins.
Ingredients
Serves: 12
- For the muffins:
- 280g self-raising flour
- 125g caster sugar
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 1/2 cups low fat milk
- 2 large ripe bananas, mashed
- 2 Granny Smith apples - peeled, cored and grated
- 1 tablespoon grated orange rind
- 1 teaspoon vanilla essence
- For the icing glaze:
- 60g caster sugar
- 3 tablespoons water
- 1/2 teaspoon ground cinnamon

OK, so I made a last minute edit. Although I had apples in the fridge, I also had frozen blueberries and the thought of banana and blueberries was too good to pass up. I just wanted that tangy berry hit!
The muffins are soft and moist, but make sure you spray the inside of the patty pans as they're super sticky and you'll lose half your muffin if you don't. They're not super sweet, but they're quite light and you don't get that 'heavy' feeling in your stomach. Winner! If anyone makes these with apple, can you let me know how they turn out? Yum, these sound so delicious. I have over two dozen bananas in the freezer waiting to be turned into baked goods... (I have issues with throwing things out!)
